Making gingerbread!
The Maryland state Food Supplement Nutrition Education program focuses on nutrition education for low-income Maryland residents, children through seniors.
For 2 weeks, I had the opportunity to work one-on-one with preschool, elementary and middle school students. During this time, I was able to not only observe, but also teach my own classes based on FSNE curriculum for nutrition and gardening with elementary school students. I was able to work with middle school students to teach about healthy snacking and perform a healthy snack activity with both large and small groups. I was also able to teach a preschool class about healthy eating and perform an interactive cooking demonstration.

I also had the opportunity during this rotation to perform two cooking demonstrations with low-income families at a local food pantry in Howard County.
These cooking demonstrations included finding quick, inexpensive, healthy recipes featuring foods available at the food pantry. We were also responsible for getting the ingredients, planning the demonstration, creating hand-outs, and cooking the meal.

Later in the year, I also had the opportunity to co-teach a class on increasing fruit and vegetable consumption with low-income seniors in a inner city apartment complex in Baltimore. During this class, in addition to encouraging fruit and vegetable consumption, I was able to teach senior yoga to the seniors to encourage physical activity. In addition to teaching, we were also.responsible for finding healthy 5-ingredient recipes featuring fruits and vegetables for the seniors to try.
